Cacoa powder
A full flavor cocoa powder with a fat content 10-12% and 10-14%, suited for the bakery as well as the sports nutrition industry
Cocoa beans are removed from cocoa pods and fermented for several days to develop flavor. The fermented beans are cracked open to remove the shells, leaving the cocoa nibs. The nibs are ground into a thick paste, called cocoa liquor. Cocoa butter is partially or fully pressed out of the liquor, leaving cocoa solids. The solids are then ground into fine cocoa powder.
It is a dry, brown powder with an intense chocolate flavor, used widely in baked goods, such as muffins and cakes. It can be added to drinks and smoothies as well as the use in protein powders.
