Cocoa beans are removed from cocoa pods and fermented for several days to develop flavor. The fermented beans are cracked open to remove the shells, leaving the cocoa nibs.
Cocoa nibs are the small pieces of crushed cocoa beans that remain after the beans have been fermented, dried, roasted and shelled. They are essentially the purest form of chocolate in solid form, containing both cocoa solids and cocoa butter, but without added sugar or milk.
Cocoa nibs are commonly used in baked goods such as cookies, granolas and trail mixes. In the sports nutrition industry, the nibs are widely included in protein bars and smoothies.
